Carrot Cake Muffins…These are so good!

Yum, yum, yum…if you thought my other muffins were good then you must try these…So good, sugar-free and packed with healthy fats.

Ingredients make 12 muffins

1 1/4 cups of blanched almond flour
2 tbs coconut flour
1/2 tsp of baking soda
1/8 tsp salt
2 tsp ground cinnamon
1/2 tsp of ginger
1/4 tsp of nutmeg
2 omega-3 or pastured eggs
1/3 cup avocado oil
2/3 cup unsweetened coconut milk
1/3 cup swerve (erythritol)
2 tsp vanilla
2 large carrots, grated
1/4 cup chopped walnuts or pecans

  1. Preheat oven to 350 degrees F.
  2. Prepare a muffin tin with cupcake liners.
  3. Mix together the almond flour, coconut flour, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. In a small bowl, combine eggs, oil, coconut milk, swerve, and vanilla.
  5. Mix wet ingredients into dry mixture, then add grated carrots and nuts.
  6. Combine everything together.
  7. Portion mix evenly into muffin tins
  8. Bake for 12-18 minutes, or until a toothpick comes out clean. Allow muffins too cool.

These are my new favorite muffins. If you have a sweet tooth but still want something healthy you have to try these muffins. You will love them and so will your family. Let me know if you try them.
