Yum, yum, yum…if you thought my other muffins were good then you must try these…So good, sugar-free and packed with healthy fats.
Ingredients make 12 muffins
1 1/4 cups of blanched almond flour
2 tbs coconut flour
1/2 tsp of baking soda
1/8 tsp salt
2 tsp ground cinnamon
1/2 tsp of ginger
1/4 tsp of nutmeg
2 omega-3 or pastured eggs
1/3 cup avocado oil
2/3 cup unsweetened coconut milk
1/3 cup swerve (erythritol)
2 tsp vanilla
2 large carrots, grated
1/4 cup chopped walnuts or pecans
- Preheat oven to 350 degrees F.
- Prepare a muffin tin with cupcake liners.
- Mix together the almond flour, coconut flour, baking soda, salt, cinnamon, ginger, and nutmeg.
- In a small bowl, combine eggs, oil, coconut milk, swerve, and vanilla.
- Mix wet ingredients into dry mixture, then add grated carrots and nuts.
- Combine everything together.
- Portion mix evenly into muffin tins
- Bake for 12-18 minutes, or until a toothpick comes out clean. Allow muffins too cool.
