- 2 cups of skin-less chicken breast
- 1/2 cup of diced red onions
- 1/2 cup of diced apples
- 1/2 cup grapes, halves
- 1/4 cup slivered almonds
- 1/2 cup plain Greek Yogurt
- 1 tablespoon freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- Bread, Pita, or Romain Lettuce leaves
Directions
- In a large bowl, combine chicken, red onions, grapes, apples, almonds, diced onions, Greek yogurt, lemon juice, salt
and pepper, to taste. - Chill and serve on bread with chicken mixture and lettuce
